The course titles are shown below and are generally aimed at beginners through to intermediate level cooks. If you have alot of experience and require something more challenging, or have a different suggestion for a course that is not listed, please contact us as we are very flexible!

Each course runs for one-day from 9.30am to 5pm with a break for lunch and to give plenty of opportunity for hands-on experience, we do not run courses with more than 3 people. You can choose as many courses as you wish during your stay at La Vieille Forge and we request three days notice, subject to availability for dates.

The Complete Dinner Party
You will receive a demonstration and ongoing tutorial during your preparation of 3 different 3-course meals. Throughout the day there will be ongoing advice on planning, timing, balanced meals, budgets, wines etc.

Stocks & Sauces
You will learn the fundamentals of making and using stocks for use in future menus. You will then use stocks to create sauces from scratch to impress your guests, maximise use of the ingredients in your pantry and expand your repertoire

Cooking Meat & Fish
Many people are unsure as to the correct way to cook different cuts of meat and fish and the different service styles that are appropriate. This course will ensure you get the most flavour and best results from the main ingredients of your meal and gives a brief overview of the types of wine and ideas for sauces that best accompanies different meats and fish

Easy Desserts
When so much thought and effort often goes into the main course, the dessert is often either an afterthought or you simply run out of time. If you would like to have a better range of easy yet effective desserts up your sleeve then this is the course for you

Starters

If you always end up serving the same starter, either because it is easy or you just can't think of anything different, increase your range and make an excellent first impression for your guests as a taster of what is to come in the rest of the meal.
